Varna is a coastal city, and the menu follows the sea: fish soup, fried rapana (a sea snail) and grilled sea bass are standard in the fish restaurants along the seafront. Kebapche, the Bulgarian take on grilled minced meat, holds down the landward end of the menu and is priced closer to street food than to fish. Rapana — the local speciality

Rapana, a sea snail, has lived in the Black Sea since the mid-twentieth century and is now part of the local kitchen, most often fried (€9.20, a 150 g portion). It tastes closer to squid than to shellfish, and further from the coast it turns up less often.

Kebapche and street food

Kebapche (€3–5) is minced meat shaped into an elongated roll and grilled — do not confuse it with the ćevapi found elsewhere in the Balkans, though it looks similar; the mix, the seasoning and the shape are different. Street food in general runs about €3–5, while a restaurant meal without fish comes to about €9–12.
