Bryndza dumplings with bacon are Slovakia's national dish — short potato dumplings tossed in sheep's-milk bryndza cheese, €8.90 at the restaurant Koliba. Alongside them come kapustnica, a sauerkraut soup with smoked meat, and the Bratislava roll, a small poppy-seed or walnut pastry sold by weight and eaten on the move.

Kapustnica

Soup for a cold day

Sauerkraut cooked with smoked meat and sausage, a thick soup traditionally served on Christmas Eve but offered year-round in restaurants. Thick and warm, made for cold days. At Bratislavská reštaurácia on SNP Square a 0.33 l bowl runs €5.90 (0.33 l).

The Bratislava roll

A sweet stop on the move

A small pastry filled with poppy seed or walnut, baked to a golden crust, sold by the piece in the Old Town's bakeries. Sweet, and easy to carry. At Kráľovská pekáreň a 50-gram roll runs €0.75 — enough for a bench break between the castle and the cathedral.
