Hammamet in 2 days
Of a week in Hammamet, two days go on the road: one to Cap Bon, one to Tunis and Carthage. The rest is the beach, with the old town for the evenings.

A week in Hammamet doesn't split into seven different plans. Five days are the beach, and two go on the road — one to Cap Bon, one to the capital. The old town, the kasbah and Villa Sebastian aren't a third day but an evening walk that fits into any of the other five.
Cap Bon: Nabeul, then Kelibia
Nabeul, train (SNCFT, via Bir Bou Rekba). The pottery town is on the way to Kelibia, so this day doesn't make two separate trips. On a Friday there's a market here the whole peninsula comes to, until noon and it's over; on other days the potters' workshops are still open, just without the crowd.
On to Kelibia, louage via Nabeul, or a driver, an hour's drive from Nabeul.
The Kelibia fortress, on a hill above the harbour. Entry is 8 TND (€2.37), fortress, seeing it with the beach below takes a full day.
Lunch at the harbour, where fish is sold by weight straight off the boats.
El Mansoura beach, below the fortress, free to walk onto.
Head back to Hammamet before dark; a late-evening louage on this route isn't a sure thing.

Tunis, Carthage and Sidi Bou Said
The road to Tunis, train from Bir Bou Rekba, or louage from the station, an hour on the motorway.
Carthage: the baths, Byrsa and the Punic ports on one ticket, €6 Carthage, valid for every site the same day.
Lunch in Sidi Bou Said, on a terrace over the bay, before an afternoon in the blue-and-white lanes.
Sidi Bou Said, an hour or two on foot, no ticket needed.
Back to Hammamet; if you're on the train, the evening timetable is thinner than the daytime one, so it's worth checking the last connection in the morning.
The old town fits into any evening
The kasbah, Villa Sebastian and the old town quay aren't a separate day on this plan, since they're a walk from the beach. Any one of the other five evenings, after the sun's down, is enough for all three: an hour for the kasbah, a short walk to Villa Sebastian, and dinner on the quay looking out at the fishing boats.

What if day 1 falls on a Friday?
Nothing changes in the order — Nabeul's market only runs on Fridays, so that's the day to use for it.
Do you have to book an organised trip to Tunis and Carthage?
No, but it's the one excursion the hotel sells and it's worth buying if you're not travelling with someone else; independently you go by train or louage.
