If you only have time for one trip, make it Kórnik — it's the closest and fits into half a day. Gniezno is for anyone curious where the Polish state began, but it needs a full day. Rogalin is a palace with a park, reached on two buses, making it the slowest of the three even though it isn't the farthest.
Worth it, and the easiest to reach
Kórnik Castle is a neo-Gothic residence with an arboretum around it, holding one of Poland's richest tree collections. It's bus 501 (ZTM/Kombus) from Rondo Rataje, a ride of about 33 min, a return ticket €4.11. Entry to the castle itself is paid separately on site. half a day is enough for the castle and a walk through the arboretum.

Worth it, if you're curious where Poland began
Gniezno was, with Poznań, one of the two centres of the first Polish state, and the cathedral where Emperor Otto III came to St Adalbert's tomb in the year 1000 still stands, with bronze doors from the 12th century. You go by train (Koleje Wielkopolskie), a ride of about 31 min, a return ticket €9.22. It's a full day, because the town itself needs time beyond the cathedral.

Worth it, but needs a change
Rogalin Palace has a gallery, a coach house and a park with several old oaks, some named after Slavic rulers. You get there by bus 651 to Mosina, then bus 699, about 1 h in all. Entry to the palace, gallery, coach house and park is €10.27 — the return bus fare for both legs isn't confirmed by an official source, so it isn't in the text. half a day covers it all.
