A day in Bari is arranged around three sets of hours. The cathedral is open Mon–Sat 8.30–12.30 and 16.30–19; Sun and holidays 9–13 and 16–19.30, so it is visited in the morning or towards evening. The castle's closing day is Tuesday, and the gallery's is Monday. Everything else, the old town, the basilica and the promenade, has no break or no doors.
The old town in the morning, museums after lunch, the sea to end it
The Basilica of Saint Nicholas in Bari Vecchia; open Mon–Sat 6.30–20.30, Sun 6.30–22 (crypt closes during mass), entry free. The crypt holds the saint's relics, brought from Myra in 1087.
Via Arco Basso, Orecchiette Street, in the same old town: women make pasta at tables outside their houses, and a kilo of fresh is €5–7 (1 kg).
The Cathedral of Saint Sabinus, Mon–Sat 8.30–12.30 and 16.30–19; Sun and holidays 9–13 and 16–19.30. Entry is free (crypt about €1); the crypt holds the relics of Sabinus, brought here in 844.
The Norman-Swabian Castle: Wed–Mon, hourly slots from 9 to 18, entry €6, reduced €2 (€9/€3.50 during exhibitions); the closing day is Tuesday.
Street food on the way, €2–6.50 (panzerotto), or sgagliozze, €2 (10 pieces), at the “Maria delle Sgagliozze” stall in Bari Vecchia.

The Lungomare, the long promenade by the sea, free, until sunset.
Teatro Petruzzelli, if you are going to a performance; the tour of the foyer and stalls is €5 (guided tour of the foyer and stalls).
The gallery is open Tue–Sat 9–19, Sun 9–13, so on Sunday it goes in the morning, and the old town and the promenade wait for the afternoon.

Two closed days change the order
If the castle's closing day is Tuesday, the whole old town is the cathedral, the basilica and the pasta street, and the gallery moves to that afternoon. If the gallery is closed, its day being Monday, the castle takes the afternoon and time is left for the promenade. Neither of the two days breaks the rest of the plan.
