The best time to visit The Wachau
Three separate reasons for a date in the Wachau: when the boat runs its full timetable, when the apricots ripen and when the grapes are picked — the three rarely line up.

The date in the Wachau doesn't just pick the weather — it picks whether the boat runs at all, and what happens in the valley right then: May–Jun, Sep; Jul apricots; Oct harvest. The boat season, the apricot season and the grape harvest are three separate windows, not one, and they rarely overlap.
Three calendars don't line up here: the boat has its own season, the apricots have theirs and the grape harvest has its own — coming for one doesn't automatically mean catching another.
Best time to go: May–Jun, Sep; Jul apricots; Oct harvest
May, June and September keep the boat on its full timetable, up to four departures a day each way. Mid-July is for the apricots, and October for the grape harvest on the terraces — each of those two months runs a sparser boat timetable than the full summer schedule.

The boat season
The boat runs from late March to early November. Until the end of April and from the start of October it runs twice a day each way, not four; outside that window, from December to March, the boat doesn't run at all, so the valley is only reachable by train, bus and bike then.
The apricot season and the grape harvest
Apricots hold the market stalls and the menus for three to four weeks from mid-July, and that is the only window for eating them fresh, before they turn into jam and schnapps. The grape harvest on the terraces runs in October, picked by hand, by which point the boat is already on its sparser timetable.

Winter
Melk Abbey stays open all year, none (shorter hours in winter), just with shorter winter hours. The villages, the bridges and the abbey itself are still open to visit, but without the boat the valley is crossed by train, bus or bike, in colder weather.
Coming for the apricots doesn't mean also catching the full boat timetable, or the other way round — the two windows don't have to overlap for a day to be worth it.
